Canning Watermelon Jelly, Watermelon Jelly
6 cups seeded chopped watermelon
5 cups sugar
1/3 cup white wine vinegar or white balsamic vinegar
1/4 cup lemon juice
red food color
2 pkgs liquid fruit pectin
Process watermelon until smooth and strain into a pot. Stir in sugar, vinegar, lemon juice and food color. Bring to a full rolling boil over high heat stirring constantly. Stir in pectin and boil for 1 minute.
Ladle into jars, leaving 1/4 head space. Remove bubble and process for 10 minutes in boiling water bath..
